Ingredients:
- 1 cup of long grain white rice
- 1 pint grape tomatoes
- 1 tablespoon olive oil
- Kosher salt and black pepper
- 1 ½ pounds of skinless salmon filet
- 2 teaspoons of curry powder
- ¼ teaspoon curry powder
Directions:
- Preheat your oven 400° F
- Prepare your rice according to the package directions
- Toss the tomatoes, oil, and about ¼-teaspoon salt and ¼-teaspoon pepper.
- Then roast the salmon about 18 minutes or until it is opaque throughout.
